A warm and nourishing soup that combines the creamy texture of white beans with the hearty flavors of Tuscan herbs and vegetables.

Ingredients

  • 2 cups cooked white beans
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 cups spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion, carrots, and celery, and sauté until the vegetables are tender.
  3. Stir in the cooked white beans, vegetable broth, thyme, and rosemary.
  4. Bring to a simmer and cook for about 20 minutes.
  5. Add the spinach and cook for another 5 minutes.
  6. Season with salt and pepper to taste before serving.
