Ingredients

  • 1 pound turkey bacon
  • 2 cups diced chicken breast
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups diced tomatoes
  • 1 teaspoon Italian seasoning
  • 4 cups kale, chopped
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add the onion and garlic, sautéing until softened.
  3. Add the chicken broth, tomatoes, and seasonings, bringing to a simmer.
  4. Add the diced chicken and cook until no longer pink.
  5. Stir in the kale and heavy cream, cooking for an additional 5 minutes.
  6. Serve the soup topped with crumbled turkey bacon.
