  • 1/2 cup red onion, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice

Instructions

  1. Boil the potatoes in salted water until tender, then drain and let cool.
  2. Once cooled, peel and chop the potatoes into bite-sized pieces.
  3. In a large bowl, combine the potatoes, green peas, red onion, and parsley.
  4. In a separate bowl, whisk together the olive oil, lemon juice, salt, and pepper.
