1 tablespoon brown sugar

Instructions
In a large pot, heat oil over medium heat. Add onion, garlic, and ginger; sauté until fragrant.
Stir in the red curry paste and cook for another minute.
Add the vegetable broth and bring the mixture to a boil.
Introduce the coconut milk, shrimp, bell pepper, and mushrooms. Simmer until the shrimp are cooked through.
Stir in lime juice, fish sauce, and brown sugar; adjust seasoning as necessary.
