  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease mini loaf pans.
  2. In a large bowl, mix pumpkin puree, sugars, and oil until well blended.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  6. Fold in walnuts if using.
  7. Pour batter into prepared loaf pans, filling each about 2/3 full.
  8. Swirl a mixture of cinnamon and sugar on top for extra flavor.
  9. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  10. Let cool before removing from pans.
