1 cup pumpkin puree
1/2 cup vegetable oil
1 cup granulated sugar
2 large eggs
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1/4 cup brown sugar
2 teaspoons ground cinnamon (for swirl)
Instructions
Preheat the oven to 350°F (175°C) and grease mini loaf pans.
In a large bowl, mix pumpkin puree, oil, sugar, and eggs until smooth.
In another bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
In a small bowl, mix together brown sugar and cinnamon for the swirl.
Pour half of the batter into the prepared pans, sprinkle with a portion of the cinnamon swirl mixture, then add the remaining batter and top with more swirl mixture.
Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
Let cool before removing from pans.
