  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1/4 cup brown sugar (for swirl)
  • 1 teaspoon cinnamon (for swirl)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the pumpkin puree, sugars, and oil until combined.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and spices.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. In a small bowl, mix the brown sugar and cinnamon for the swirl.
  7. Pour half of the batter into a greased mini loaf pan, sprinkle half of the cinnamon mixture, and then layer the remaining batter and cinnamon mixture on top.
  8. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  9. Allow to cool before removing from the pan.

Notes

  • For added flavor, consider adding nuts or chocolate chips.
  • This recipe can be doubled for larger batches.
