1 cup pumpkin puree
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup vegetable oil
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1/4 cup brown sugar (for swirl)
1 teaspoon cinnamon (for swirl)
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, mix the pumpkin puree, sugars, and oil until combined.
Add the eggs one at a time, mixing well after each addition.
In a separate bowl, whisk together the flour, baking soda, salt, and spices.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
In a small bowl, mix the brown sugar and cinnamon for the swirl.
Pour half of the batter into a greased mini loaf pan, sprinkle half of the cinnamon mixture, and then layer the remaining batter and cinnamon mixture on top.
Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
Allow to cool before removing from the pan.
Notes
For added flavor, consider adding nuts or chocolate chips.
