  • 1/2 cup sugar
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the pumpkin puree, sugar, oil, and eggs until well combined.
  3. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients until just combined.
  5. In a separate small bowl, mix the brown sugar and a bit of cinnamon for the swirl.
  6. Pour half of the batter into a greased mini loaf pan, sprinkle with the cinnamon mixture, then top with the remaining batter.
  7. Swirl with a knife to create a marbled effect.
  8. Bake for about 30-35 minutes or until a toothpick comes out clean.
  9. Allow to cool before slicing and serving.
