1 cup pumpkin puree
1/2 cup sugar
1/2 cup brown sugar
1/2 cup vegetable oil
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/4 cup sugar (for cinnamon swirl)
2 teaspoons ground cinnamon (for cinnamon swirl)
Instructions
Preheat the oven to 350°F (175°C) and grease mini loaf pans.
In a bowl, mix pumpkin puree, sugar, brown sugar, vegetable oil, and eggs until well combined.
In another bowl, whisk together flour, baking soda, baking powder, cinnamon, salt, and nutmeg.
Gradually add dry ingredients to the wet mixture until just combined.
Prepare the cinnamon swirl by mixing sugar and ground cinnamon in a small bowl.
Pour half of the pumpkin bread batter into the prepared pans, sprinkle with half of the cinnamon sugar mixture, then add the remaining batter and top with the rest of the cinnamon sugar.
Bake for 25-30 minutes or until a toothpick comes out clean.
Let cool before removing from pans.
Notes
For a richer flavor, consider adding chopped nuts or chocolate chips to the batter.
