A delicious and easy recipe for Peruvian chicken and rice served with a zesty green sauce.

  • 1 pound chicken thighs
  • 2 cups rice
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 jalapeño
  • 1 cup cilantro
  • 2 limes
  • 1 garlic clove
  • 1 tablespoon olive oil

Instructions

  1. Season the chicken with cumin and paprika.
  2. Heat olive oil in a pan and brown the chicken on both sides.
  3. Add the rice and chicken broth to the pan and bring to a boil.
  4. Reduce heat, cover, and simmer until rice is cooked.
  5. Meanwhile, blend jalapeño, cilantro, lime juice, and garlic to make the green sauce.
  6. Serve the chicken and rice with the green sauce on top.
