This no-bake blueberry chia seed pie is a delightful, healthy dessert that’s easy to prepare and sure to impress.

Ingredients

  • 1/4 cup chia seeds
  • 1/4 cup honey or maple syrup
  • 2 cups almond milk
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 cup crushed graham crackers
  • 1/4 cup melted coconut oil

Instructions

  1. In a bowl, combine blueberries, chia seeds, honey or maple syrup, almond milk, vanilla extract, and salt.
  2. Mix well and let it sit for 15 minutes to thicken.
  3. In another bowl, combine crushed graham crackers and melted coconut oil.
  4. Press the mixture into the bottom of a pie dish.
  5. Pour the chia filling over the crust and spread evenly.
  6. Refrigerate for at least 2 hours before serving.
