- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 bay leaf
- 2 cups cooked rice or pasta
- 2 cups shredded cooked chicken
- Salt and pepper to taste
- Fresh parsley for garnish
- In a large pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until translucent.
- Add carrots and celery; cook for another 5 minutes.
- Pour in chicken broth and diced tomatoes.
- Stir in basil, oregano, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add rice or pasta and cooked chicken, simmer for another 5 minutes.
- Season with salt and pepper, remove bay leaf, and serve.
Notes
- For a vegetarian version, substitute chicken broth with vegetable broth and omit chicken.
- Can be made ahead of time and stored in the refrigerator.
