Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 2 cups cooked rice or pasta
  • 2 cups shredded cooked chicken
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Add carrots and celery; cook for another 5 minutes.
  4. Pour in chicken broth and diced tomatoes.
  5. Stir in basil, oregano, and bay leaf.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Add rice or pasta and cooked chicken, simmer for another 5 minutes.
  8. Season with salt and pepper, remove bay leaf, and serve.

Notes

  • For a vegetarian version, substitute chicken broth with vegetable broth and omit chicken.
  • Can be made ahead of time and stored in the refrigerator.
