Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup protein powder
  • 1/2 cup honey or maple syrup
  • 1/2 cup unsweetened applesauce
  • 1/2 cup milk of choice
  • 2 cups fresh blueberries
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix together the whole wheat flour, protein powder, baking powder, baking soda, and salt.
  3. In another bowl, combine the honey (or maple syrup), applesauce, milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Gently fold in the blueberries.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow the muffins to cool before serving.
