  • 4 pieces chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix together olive oil, oregano, garlic powder, salt, and pepper. Coat the chicken breasts with the mixture.
  3. Grill the chicken for 6-7 minutes on each side, or until fully cooked.
  4. Let the chicken rest for 5 minutes, then slice it.
  5. In serving bowls, layer cooked quinoa, grilled chicken, cherry tomatoes, cucumber, feta cheese, red onion, and olives.
  6. Drizzle with additional olive oil and serve.
