1 cup cottage cheese
4 large eggs
1/2 cup oats
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/4 teaspoon salt
Instructions
In a blender, combine the cottage cheese, eggs, oats, vanilla extract, baking powder, and salt. Blend until smooth.
Heat a non-stick skillet over medium heat and lightly grease with cooking spray.
Pour 1/4 cup of the batter onto the skillet for each pancake.
Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
Repeat with the remaining batter.
Serve warm with your choice of toppings.
Notes
For a sweeter pancake, add a tablespoon of honey or maple syrup to the batter.
