  • 1 cup strong brewed coffee
  • 2 tablespoons coffee liqueur
  • 2 cups heavy whipping cream
  • 1 cup mascarpone cheese
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 20-24 gingerbread cookies
  • 1/4 cup cocoa powder, for dusting

Instructions

  1. In a bowl, combine brewed coffee and coffee liqueur.
  2. In another bowl, whip the heavy cream until soft peaks form.
  3. Add mascarpone, sugar, vanilla, ginger, and cinnamon to the whipped cream and gently fold until combined.
  4. Dip the gingerbread cookies in the coffee mixture and layer them in a serving dish.
  5. Spread half of the mascarpone mixture over the cookies.
  6. Add another layer of dipped gingerbread cookies and top with remaining mascarpone mixture.
  7. Refrigerate for at least 4 hours before serving.
  8. Dust with cocoa powder before serving.
