A comforting and creamy lasagna soup that’s perfect for chilly nights.

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can diced tomatoes (28 ounces)
  • 3 cups pasta (lasagna noodles, broken into pieces)
  • 1 cup heavy cream
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot, cook the ground beef over medium heat until browned. Drain excess grease.
  2. Add onion and garlic to the pot, cooking until onion is translucent.
  3. Pour in the chicken broth and diced tomatoes, then bring to a simmer.
  4. Add the broken lasagna noodles and Italian seasoning; cook until noodles are tender.
  5. Stir in heavy cream and season with salt and pepper.
  6. Remove from heat and sprinkle with mozzarella and Parmesan cheese.

Notes

  • For a vegetarian version, substitute ground beef with lentils or mushrooms.
  • Serve with crusty bread for dipping.
