  • 4 boneless, skinless chicken breasts
  • 1/2 cup unsalted butter, softened
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1/4 cup vegetable oil for frying

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the butter, parsley, garlic, salt, and pepper until blended.
  3. Take a chicken breast, make a slit in the side and fill it with the butter mixture. Seal the slit with toothpicks.
  4. Set up a breading station with flour, beaten eggs, and breadcrumbs.
  5. Dredge the stuffed chicken in flour, dip in eggs, then coat with breadcrumbs.
  6. Heat oil in a skillet and fry the chicken until golden brown on both sides.
  7. Transfer the chicken to a baking dish and bake for 20-25 minutes or until cooked through.
