Ingredients

  • 4 pieces turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon dried basil
  • 1 teaspoon sugar
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add onion and garlic to the pot and sauté until soft.
  3. Stir in the crushed tomatoes, vegetable broth, and dried basil. Bring to a simmer.
  4. Blend the soup until smooth. You can use an immersion blender or transfer to a regular blender.
  5. Return the soup to heat, stir in the heavy cream, and season with sugar, salt, and pepper.
  6. Serve hot, garnished with crumbled turkey bacon.

Notes

  • For a vegan version, skip the turkey bacon and use coconut milk instead of heavy cream.
