  • 1 cup cooked rotisserie chicken, shredded
  • 8 ounces mushrooms, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced onion and sliced mushrooms, and sauté until softened.
  3. Stir in the minced garlic, thyme, salt, and black pepper.
  4. Add the shredded rotisserie chicken and chicken broth, and bring to a simmer.
