Ingredients

  • 1 pound meatballs
  • 3 large potatoes, diced
  • 2 cups carrots, sliced
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons dried thyme
  • salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  2. Add meatballs and cook until browned.
  3. Stir in potatoes, carrots, and thyme; cook for 5 minutes.
  4. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  5. Stir in heavy cream and season with salt and pepper. Cook for an additional 5 minutes.
  6. Serve hot with crusty bread.

  • This soup can be made ahead and stored in the refrigerator.
