  • 4 large eggs
  • 1 cup diced turkey bacon
  • 1 cup chopped spinach
  • 1/2 cup chopped bell peppers
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine cottage cheese and eggs, whisking until smooth.
  3. Add diced turkey bacon, spinach, bell peppers, salt, and black pepper. Stir to combine.
  4. Pour the mixture into a greased muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes or until the egg bites are set and lightly golden on top.
