- 200 grams halloumi cheese
- 250 grams pasta (your choice)
- 1 cup cherry tomatoes, halved
- 1 bell pepper (any color), diced
- 1 cup cucumber, diced
- 1/4 cup olives
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt to taste
- Pepper to taste
- Cook the pasta according to the package instructions. Drain and set aside.
- In a skillet, heat the olive oil over medium heat.
- Cut the halloumi into slices and fry in the skillet until golden brown on each side.
- In a large bowl, combine the cooked pasta, cherry tomatoes, bell pepper, cucumber, olives, and fried halloumi.
- Drizzle with lemon juice, and season with salt and pepper. Toss gently to combine.
