A delicious and vibrant pasta salad that adds a fresh twist to your dinner table.

Ingredients

  • 200 grams halloumi cheese
  • 250 grams pasta (your choice)
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper (any color), diced
  • 1 cup cucumber, diced
  • 1/4 cup olives
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. In a skillet, heat the olive oil over medium heat.
  3. Cut the halloumi into slices and fry in the skillet until golden brown on each side.
  4. In a large bowl, combine the cooked pasta, cherry tomatoes, bell pepper, cucumber, olives, and fried halloumi.
  5. Drizzle with lemon juice, and season with salt and pepper. Toss gently to combine.

Notes

  • This salad is best served fresh but can be stored in the refrigerator for up to 2 days.
