  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 strips turkey bacon, chopped
  • 2 cups red wine
  • 1 cup beef broth
  • 1 large onion, chopped
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 pound mushrooms, quartered
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a large Dutch oven, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  3. Add beef to the pot and sear on all sides until browned. Remove and set aside.
  4. Add onions, carrots, and garlic to the pot. Sauté until onions are translucent.
  5. Stir in the tomato paste, thyme, and bay leaves.
  6. Sprinkle flour over the vegetables and stir to combine.
  7. Return the beef and bacon to the pot, then add red wine and beef broth. Bring to a simmer.
  8. Cover and transfer to the oven. Cook for about 2.5 to 3 hours.
  9. In the last 30 minutes, add the mushrooms.
  10. Season with salt and pepper to taste before serving.

Notes

  • For deeper flavor, let the stew sit overnight in the refrigerator before reheating.
  • Serve with crusty bread or over mashed potatoes.
