- 2 pounds beef chuck, cut into 1-inch cubes
- 4 strips turkey bacon, chopped
- 2 cups red wine
- 1 cup beef broth
- 1 large onion, chopped
- 2 carrots, diced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 2 bay leaves
- 1 pound mushrooms, quartered
- 2 tablespoons all-purpose flour
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- Preheat the oven to 325°F (160°C).
- In a large Dutch oven, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- Add beef to the pot and sear on all sides until browned. Remove and set aside.
- Add onions, carrots, and garlic to the pot. Sauté until onions are translucent.
- Stir in the tomato paste, thyme, and bay leaves.
- Sprinkle flour over the vegetables and stir to combine.
- Return the beef and bacon to the pot, then add red wine and beef broth. Bring to a simmer.
- Cover and transfer to the oven. Cook for about 2.5 to 3 hours.
- In the last 30 minutes, add the mushrooms.
- Season with salt and pepper to taste before serving.

- For deeper flavor, let the stew sit overnight in the refrigerator before reheating.
- Serve with crusty bread or over mashed potatoes.
