  • 12 Medjool dates
  • 1/2 cup creamy peanut butter
  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Make a lengthwise cut in each date and remove the pit.
  3. Fill each date with a teaspoon of peanut butter.
  4. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals until melted and smooth.
  5. Dip each stuffed date into the chocolate mixture, ensuring it’s fully coated.
  6. Place the chocolate-covered dates on a parchment-lined baking sheet.
  7. Chill in the refrigerator until the chocolate hardens.

Notes

  • For a twist, try using almond butter instead of peanut butter.
