  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 4 flour tortillas
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a bowl, whisk together the eggs, salt, and pepper.
  2. Heat a non-stick skillet over medium heat and melt 1 tablespoon of butter.
  3. Pour in the egg mixture and scramble until just set.
  4. Remove the eggs from the skillet and set aside.
  5. In the same skillet, add another tablespoon of butter, then place a tortilla in the skillet.
  6. Sprinkle half of the cheddar cheese on one half of the tortilla.
  7. Add half of the scrambled eggs on top of the cheese.
  8. Fold the tortilla over and cook until golden brown on both sides.
  9. Repeat with the remaining ingredients to make a second quesadilla.
  10. Cut into wedges and serve warm.
