2 cups lentils
4 cups vegetable broth
3 large carrots, diced
1 onion, chopped
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon paprika
2 tablespoons olive oil
Salt to taste
Pepper to taste
Instructions
Heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened.
Add the diced carrots, cumin, paprika, salt, and pepper. Cook for a few minutes.
Add lentils and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for about 30 minutes or until lentils are tender.
Use an immersion blender to puree the soup until smooth, or blend in batches in a regular blender.
Taste and adjust seasoning before serving.

For extra flavor, add a splash of lemon juice before serving.
