Ingredients

  • 2 cups lentils
  • 4 cups vegetable broth
  • 3 large carrots, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the diced carrots, cumin, paprika, salt, and pepper. Cook for a few minutes.
  3. Add lentils and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for about 30 minutes or until lentils are tender.
  4. Use an immersion blender to puree the soup until smooth, or blend in batches in a regular blender.
  5. Taste and adjust seasoning before serving.
